De herfst in bij mij synoniem met pompoenen. In plaats van de klassieke bereidingen, heb ik het deze keer is in een lasagne verwerkt.

Stap 1

Snij de flespompoen doormidden, haal de pitten eruit en schil hem. Snij er dan nadien blokjes van.

Schil de wortelen, pel de ui en knoflook en snij ook in stukjes.

Stap 2

Fruit dan de ui en knoflook aan. Voeg de blokjes pompoen en wortel toe. Laat nog even stoven en doe dan de tomatenblokjes erbij. Wanneer het begint te pruttelen, voeg dan de linzen toe. Zet op zacht vuurtje en laat stilletjes verder garen tot de linzen gaar zijn.

Stap 3

Als de saus klaar is, kan je de lasagne gaan opbouwen.  Breng eerst een laagje saus in de vorm, dan een laagje lasagnebladen en dan weer met saus. Bouw zo verder en eindig met een laagje saus. 

Bestrooi eventueel nog met (vegan) kaas

Step 4

Zet in een voorverwarmde oven van 180 graden voor 25 minuten. Prik om te zien of de lasagnebladen gaar zijn.
